Kickoff at Perth Stadium
More than a decade on from initial discussions, the new Perth Stadium will open its doors to the public on January 21st, 2018.
The state-of-the-art $1.45 billion stadium will host 60,000 punters for an array of sporting, music and business events, with official events scheduled to kick off with the Women’s AFL in February.
Complete with two of the largest screens in the southern hemisphere, over 1500 lights resulting in the biggest LED lighting system in the world, a new train line, sprawling parkland and 51 food and drink outlets, not a single feature of the stadium was half-baked – especially when it came to designing the commercial kitchen.
“It’s excellent, everything is top standard and the latest technology,” says Perth Stadium Executive Chef, Jochen Beranek of his largely Comcater fitted kitchen.
Working with consultant Mike Driscoll, director of Mike Driscoll & Associates alongside commercial kitchen equipment dealer Caterlink, the kitchen is fitted with RATIONAL SelfCookingCenter® combi ovens, FRIMA VarioCooking Center Multificiency® bratt pans, Frymaster commercial deep fryers, Lincoln commercial pizza ovens, PureVac Vacuum Packing units, commercial microwaves from Menumaster, storage solutions from world leader Cambro and a range of Antunes quick service solutions.
“We have 86 RATIONAL ovens in total, they can roast, they can steam, they can bake, they can attach a USB to it so you have all your profiles created on how you want to cook what,” explains Chef Jochen.
This army of combi ovens will not be the only kitchen hand getting put to the test, with Chef Jochen employing 1000 catering staff across the stadium’s 26 kitchens, capable of pumping out a staggering 60,000 meals and snacks per hour!
“I feel like someone handed me a key to a new Mercedes,” quipped Chef Jochen.
